This baroquely opulent, intimately territorial and supremely focused and drinkable natural Sauvignon comes from the very heart of Sancerre yet goes against the grain of contemporary, pale and rather castrated Sancerre Sauvignons in a thousand different ways. The name, a homage to Sebastien’s wife, means “rock” in Lithuanian and points to the white limestone-based soils typical of this terroir. This is a natural wine for the ages: 100% Sauvignon from a single cru of 50 years of age worked according to strict biodynamics, the grapes ferment naturally in steel and see short skin contact before elevage of 36 months in used barriques. It goes to rest in the bottle with no trace of fining, filtration or added SO2. Supremely deep, majestic and lush without losing tension and vibrancy: grilled red figs with turmeric, hibiscus honey and smoked hay dance.
Serve at 8-10 °C with Asian cuisine, spicy dishes, seafood, white meats.
Sébastien Riffault, son of winemaker Etienne Riffault, began his own label in 2002. The big difference between him and the rest of Sancerre is his belief in biodiversity and biodynamic principals and natural winemaking. These principals are rare to find in Sancerre where many vines and wines are made with chemicals and manipulation. Sébastien Riffault produces a kind of Sancerre that bears little resemblance to the wines most produce in that appellation today. He often harvests with a large percentage of botrytis and is not afraid of oxygen or time on skins. All products by this producer
