The 15-year-old vineyards ripen in dry gravel soil. Wine maceration lasts 4/5 hours at low temperature. Depending on the harvest and other circumstances, the wine is stored with yeast for three months. Light, fresh, dry, fruity white smells of tropical fruits and ripe citrus, boxwood and fennel. In the mouth, the wine is complex with acid integrated into the dermis and a pleasant bitter finish.
Serve at 8-10 °C with seafood, white fish dishes, stewed chicken, white meat snacks.
