Description

Partial destemming. Fermented by indigenous yeasts in concrete tanks. No use of sulfur before bottling. Aged in concrete tanks on its lees for 12 to 18 months. Bottling without fining or filtration.

Serving recommendation

Serve at 16-18 °C with both rustic and sophisticated dishes, stews, braises, and grilled meats, dark fish and tomato-based dishes such as ratatouille.
