A strong personality marked by both the style of Brézème and the power of old vine Syrah, the signature of the great wines of the Northern Rhône. The acidity is marked, giving the wine incredible aging potential. It gains in suppleness, refinement, and complexity with time. Whole-cluster maceration for 8 to 10 days. Fermented by indigenous yeasts in wooden vats. No use of sulfur before bottling. Aged in foudres on its fine lees for 36 to 48 months. Bottling without fining or filtration. Depending on the vintage, the wine may or may not see any additions of sulfur.
Serve at 16-18 °C with both rustic and sophisticated dishes, stews, braises, and grilled meats, dark fish and tomato-based dishes such as ratatouille.
