A savoury, full-bodied, creamy-textured wine with a bright, buttery citrus finish, it comes from Becksoffer vineyards around Pablo Bay, north of San Francisco. Fog breezes from the bay create a cooler climate. The clay soil, which retains moisture, the hand-picking of the grapes and the sorting by hand at low temperatures give the wine its power and strength.
The fermentation of the grape juice was carried out at a low temperature (14°C). The wine is aged on the lees. Part of the wine is aged in oak barrels. Oak is used sparingly so as not to obscure the fresh minerality and liveliness of the fruit. The wine has aromas of buttered cashews, ripe pears and ripe peaches, accompanied by a soft menthol note.
Serve at 10 - 12 °C with fried halibut, shrimp seasoned with butter-cream sauce, grilled chicken, fried pumpkin salad or sweet potato chops.
